Southern Style Chicken Salad Croissants
Regardless if it’s a bridal tea or a baby shower, every special ocassion in the south requires chicken salad croissants! If you are avoiding breads, scoop the salad onto a bed of lettuce. Serve with fresh fruit and cottage cheese!
If you are in a pinch for time a #usewhatyouhave tip is to pick up a rotisserie chicken, instead of cooking your own. This is always a favorite with my family. In fact, my sis just said it’s the best chicken salad she’s ever eaten! Let me know what you think!

Southern Style Homemade Chicken Salad
4 large chicken breasts, cooked and shredded
2 cans water chestnuts, drained and chopped
2 pk. slivered almonds
1 whole celery, diced
1/2 onion, chopped
Grapes, per taste, halved
2 cans crushed pineapple, in heavy syrup
Dukes mayonnaise
Add all ingredients in a LARGE bowl…it makes a lot! Scoop onto croissants just before serving.
