Fried Apple Pies
5 med. Granny Smith apples
3 T. unsalted butter
2 T. brown sugar
1/2 c. granulated sugar
2 T. lemon juice
1 T. cornstarch
1 tsp. ground cinnamon
1/4 tsp. ground nutmet
Homemade pie crust or biscuit dough (*I tried Pillsbury refrigerated pie crust)
Peel, core and chop apples into small pieces. Melt butter. Cook apples over medium heat for about 15-20 mins or until soft. Sprinkle with brown sugar, sugar and lemon juice, while they cook. Stir occassionally, to prevent burning.
Dissolve the cornstarch in 1/4 c. cold water. Stir to combine. Pour cornstarch mix into apples when they are almost done and cook until thickened. Remove from heat and allow to cool completely.
Roll out dough into 6 in. ovals, onto lightly floured surface. Scoop about 1 T. filling onto center of each oval. Fold over and press edges with fork. Place on parchment paper lined pan and place in refrigerator, while oil heats.
Heat 3 inches oil until very hot. Brown pies on both sides. Remove and drain on paper towel. Sprinkle with powdered sugar, while warm. Serve with vanilla ice cream and caramel sauce!
This was my first attempt at making one of my very favorite Southern treats! The taste was spot on! The refrigerated pie crust resulted in a very flaky crust, delicious, but messy! The next time, I am trying canned biscuits.
