Lemon Lush

Lushes are a staple on any southern dessert table. They can be made in many different flavors. Here is my recipe for the lemon version.

In a bowl, combine 1 c. self-rising flour, 1 stick softened butter and 1/2 c. chopped pecans. Press into bottom of 9X13 pan and bake at 375 for 15 mins. Allow to cool. Mix together 1 block cream cheese, 1 c. sugar and then stir in 1 c. cool whip. Spoon onto crust. Mix 2 boxes of lemon instant pudding and 3 c. milk. Pour onto dessert. Cover with remainder of cool whip. Garnish with extra nuts or lemon slices, if desired. Chill.
