Livin’ Low Carbo Loca
Well I’m twelve days into low carb living! It’s not the easiest lifestyle for a gal who loves sweets, fruit and isn’t that fond of meat. Trying new recipes is keeping it exciting! Here’s one that was a hit and I will definitely be making again!
Zucchini Enchilada Boats
1 lb. lean ground beef
4 large zucchini
1/2 c. red onion, diced
2 cloves garlic, minced (if you missed it, I did a recent Insta post on garlic)
1 tsp. smoked paprika
1 tsp. ground cumin
1 1/2 c. red enchilada sauce
1/2 c. shredded fiesta blend cheese
fresh cilantro, chopped
Preheat oven to 350. Slice zucchini in half, lengthwise and scoop out centers. Brown beef and onion together. Add spices. Place “boats” in baking dish and scoop beef mixture into each. Pour enchilada sauce over and sprinkle with cheese. Cover with foil and bake 30 mins, then uncover and bake until tender. Garnish with cilantro.
